Blackstone Cheese Cake Recipe (no bake)

Cold, dreary days equals baking in my home. There is nothing better in my mind than baking something that will make friends and family smile and forget the cold weather or whatever might be on their minds.

This recipe came from a local restaurant named Blacktone. They are no longer here unfortunately but, when they were my family and I loved to go there and have this wonderfully creamy cheese cake. I got the nerve up one day to ask for the recipe thinking what's the worse that could happen? They could turn me down and I wouldn't be out anything. Surprisingly enough, they did not turn me down. The owner himself wrote down the recipe on the guest check for me. 

It is so simple and my family loves it, not to mention my neighbors do as well since the recipe makes two pies/cakes if you use the pre-made graham cracker crusts that you find in the grocery stores. Or you can make your own crust with graham crackers, melted butter and  place it in a sheet cake/jelly roll pan to just make cheese cake bars.

Blackstone Cheese Cake (no bake)

 Cake:
2lbs cream cheese
1 ½ cups sugar
1 ½ cups heavy cream
1 TBS vanilla extract

Beat all ingredients together until smooth and at desired consistency 

Crust:
Crushed graham crackers mixed with melted butter. Form crust in either two pie dishes or in one cookie sheet/jelly roll pan. 

Top crust with cream cheese mixture and top with any fruit, pie topping ie. cherry, blueberry pie filling.
